If I could make one wish, it would be that I could eat everything I bake
and not gain a pound. But... since we all know that that's not the case, I
had to exercise some serious self-control tonight. I love baking,
especially with the pretty new KitchenAid my parents got me for
Christmas. Taylor wanted cookies, I wanted cupcakes, so I just HAD to
make both.

I tried a new Pinterest trick this week. Last time I tried to make my
own frosting it was a complete disaster--my cake was nicknamed "The Big
Sloppy." :\ So this time a bought some pre-made cream cheese frosting
and whipped it in my mixer on medium for two minutes. It was SO much
better than frosting straight out of the can. It was light and fluffy, and I was
able to use a lot more frosting per cupcake.

Then I filled a zip-loc bag with the frosting, cup the tip of the bag
off, piped the frosting on, and then smoothed it out with a knife.

I was very good, and only had one cupcake. I did have a whole lot of cookie dough though, so I jumped on the treadmill after everything was cooked and the kitchen was clean. Now that I've worked off that sugar coma feeling, I think it's time for some SportsCenter and HGTV with TK. :)
